Ingredients:- 3 tbsp. Garlic, crushed 2 large bunches of Spinach 2 tbsp. Ghee 1 tsp. Cumin Seeds ½ cup Onion, chopped 4 Green chillies, slit lengthwise 1 tbsp. Coriander seeds, crushed ¼ tsp. Turmeric Powder 1 tsp. Salt to taste 1 tbsp. Gram Flour 1 cup Water ½ tsp. Garam Masala Second Tempering:- 1 tbsp. Ghee ½ tsp. Cumin Seeds 2 whole red chillies 12 cloves of Garlic, sliced 1 tsp. Sesame Seeds Method:- - Blanche the spinach and divide it into 2 parts. - Grind the first part with a little water to a smooth paste and roughly chop the remaining. - Heat a ghee in a pan and add cumin seeds, onion, coriander seeds, garlic and cook until the garlic and the onion are lightly golden in colour. - Add green chillies, gram flour, turmeric powder and chopped spinach. - Cook on a high flame for 30-40 seconds. - Add the blanched spinach puree, water, salt and mix well. - Cook on a high flame for 60-90 seconds adding garam masala powder. - In a tempering vessel heat ghee and add cumin seeds, red chillies, garlic and let it cook until garlic turns lightly golden brown in colour. Add sesame seeds and pour over the cooked Lehsui Palak. Mix well. Lasooni Palak is ready! Palak gravy made with fresh spinach leaves tempered with garlic cloves and mild spices. LEHSUNI PALAK Ingredients 1 large bunch spinach (palak), cleaned 1½ tablespoons finely chopped garlic (lehsun) Fried garlic for garnishing Salt to taste 1 tablespoon oil 1 tablespoon butter 2 green chillies, finely chopped 1 medium onion, finely chopped 1 teaspoon garam masala powder ½ teaspoon dried fenugreek leaves (kasuri methi) powder 2 tablespoons fresh cream + for drizzling Method 1. Blanch spinach leaves in boiling salted water for a minute. Remove from heat and refresh in ice cold water. 2. Squeeze excess water and blend to a fine puree with some water. 3. Heat oil and butter in a non-stick pan. Add garlic and sauté till lightly browned. 4. Add green chillies and onion, mix and sauté till onions are lightly browned. 5. Add spinach puree and mix well. Add ½ cup water, stir and bring to a boil. 6. Add garam masala powder, salt and dried fenugreek leaves powder and mix well. Add cream, mix and cook for a minute. 7. Full Written Recipe for Lasooni palak khichdi Prep time: 15-20 minutes Cooking time: 15-20 minutes Serves: 4-5 nos. Ingredients: • Yellow Moong dal (skinless) ½ cup (washed thoroughly) • Basmati rice 1 cup (washed thoroughly) • Salt to taste • Turmeric powder 1/4th tsp • Water as required For spinach puree: • Spinach 2 large bunches (washed & cleaned) • A pinch of salt • Fresh mint leaves 3 tbsp • Fresh coriander 3 tbsp • Green chillies 2-3 nos. • Garlic 2-3 cloves For tadka: • Ghee 1 tbsp • Jeera 1 tsp • Hing ½ tsp • Ginger 1 inch • Garlic 2 tbsp (chopped) • Red chillies 1-2 nos. (broken) • Onions 1 big size (chopped) • Tomato 1 medium size (chopped) • Salt to taste • Powdered spices: 1. Coriander powder 1 tbsp 2. Jeera powder 1 tsp 3. Garam masala 1 tsp • Lemon juice 1 tsp 2nd tadka: • Ghee 1 tbsp • Garlic 3-4 cloves (sliced) • Hing ½ tsp • Whole Red chillies 2-3 nos. • Kashmiri red chilli powder a pinch Method: • Thoroughly wash the rice and yellow moong dal separately, add enough water & soak them for at least half an hour. • Once soaked, strain the water and transfer in the pressure cooker, further add salt & turmeric powder, add water & fill up to 2 inch above the dal surface. • Pressure cook for 1 whistle on medium heat, once whistled, switch off the flame and allow the pressure cooker to depressurize naturally to open the lid. Once depressurized, open the lid & just lightly stir with fork. • Clean the spinach & wash thoroughly, keep aside to blanch the spinach. • For blanching, set water for boiling in a stock pot, add a pinch of salt and the washed spinach leaves, and cook briefly for 15-30 seconds, immediately dip into ice cold water to retain its colour. • Transfer the blanched spinach in a blending jar, further add, fresh mint leaves, fresh coriander, green chillies & garlic, blend into a fine puree. Keep aside. • As the khichdi and the spinach puree is ready, lets cook by giving the tadka, set a pan on medium high heat, add ghee & jeera, allow the jeera to crackle, further add, hing, ginger, garlic & broken red chillies, cook them for a minute on medium high heat. • Further add onions & continue to cook on medium high heat, until translucent. • Once the onions turn translucent, low down the heat to medium heat & add the tomatoes, salt to taste & powdered spices, stir and cook for 2-3 minutes. Add a splash of water to avoid the spices from burning. Cook well until the tomatoes are mushy. • Once the tomatoes are mushy, add the spinach puree, stir & cook for 4-5 minutes on medium flame. • After cooking for 4-5 minutes, add the cooked moong dal & rice & some boiling water. Stir gently & cook for • Once cooked, taste and adjust salt as per taste, add lemon juice and mix well, lasooni palak khichdi is ready. make sure to pour the 2nd tadka before serving to elevate the flavour. • For 2nd tadka, heat ghee in a tadka pan, add garlic and cook until the garlic turns light golden brown in colour, further add, hing, whole red chillies and a pinch of red chilli powder, as soon as you add the red chilli powder, pour the tadka over the khichdi and serve hot, with the mint cucumber raita. For mint cucumber raita Ingredients: Cucumber 2-3 nos. Salt a pinch Curd 300 gm Powdered sugar 1 tbsp Mint paste 1 tbsp A pinch of black salt A pinch of jeera powder A pinch of black pepper powder Method: Peel and wash the cucumber well, further slice in 2 halves and scoop out the flesh with seeds, now grate the cucumber using the larger hole, sprinkle some salt, mix and let it rest for a while to release its moisture, further squeeze out the excess moisture. Keep aside. Take a sieve and pass the curd, powdered sugar, mint paste and black salt, mix well and pass it through the sieve. Lehsuni palak ka saag is a very comfort food for the garlic lovers and a must try just for its simplicity where the whole garlic combine with the Saag masala and goes very wellll with roties and naans 🤍 Ingredients: Spinach 2 Bunch Ginger(chopped) 1 Teaspoons Garlic(whole and chopped) 18 Clove Onions(chopped) 1 Cup Nutmeg powder 1 Pinch Coriander leaves 1/4 Bunch Mint leaves 1/4 Bunch Green chillies 5 Numbers Oil 4 Tablespoons Salt 0 To Kasuri methi- dry fenugreek leaves 1 Tablespoons Paneer(grated) 1 Cup Fresh cream 2 Tablespoons Butter 1 Tablespoons DIRECTIONS: 1. Boil spinach in a pan then take it out and keep it aside. 2. Heat oil in a pan and add ginger, garlic, green chillies, onions, nutmeg powder, coriander leaves, mint leaves, spinach and switch off the flame to saute it. 3. Then take the above mixture into a blender to make a smooth green paste. 4. Heat butter in a pan and add garlic, then let it cook on slow flame for 2 to 3 min. 5. Add kasuri methi, green paste and saute it for a minute then add salt and check the seasoning. 6. Then add fresh cream, grated paneer and mix thoroughly. 7. Boiled palak dal tempered with garlic. A must try recipe. LASOONI PALAK DAL Ingredients 1 tablespoon minced garlic 1 cup roughly chopped fresh spinach leaves 1 cup split skinless green gram (dhuli moong dal), soaked 1½ tablespoons ghee 1 teaspoon cumin seeds ½ teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon roasted cumin powder Salt to taste Method 1. Pressure cook skinless green gram with 2 cups water on high heat till the pressure releases once (1 whistle), reduce the heat and cook for 4-5 minutes. Set aside. 2. Heat 1½ ghee in a non-stick pan, add cumin seeds, turmeric powder and spinach leaves and mix well. 3. Add red chilli powder, cumin powder and salt and cook for 2-3 minutes. 4. Add the cooked gram and mix well. Add little water to adjust the consistency. Cook till the spinach is done. 5. Heat remaining ghee in another non-stick pan, add garlic and sauté till lightly browned. 6. Pour the tempering over the dal and serve hot. In a large vessel - boil water adequate enough to submerge the palak. Add 1 bunch palak into boiling water. Allow it to boil for 1 minute.Drain off the palak and drop into ice-cold water Transfer the blanched palak into the blender along with ginger, garlic and chillies . Blend into smooth puree. In a large kadai heat 1 tbsp butter and saute 1 bay leaf,cardamom,cinnamon,cumin and kasuri methi until it turns aromatic. Saute 1 onion until it turns golden. Add 1 tbsp besan and saute until besan turns aromatic Add cumin powder,coriander powder, garam masala and salt. Saute Add palak puree and saute slightly. Add ½ cup water and mix well adjusting consistency. Simmer for 5 mins. Add the panner pieces and mix well. Now add 1 tbsp lemon juice and mix well Prepare tadka with ghee - saute 5-6 sliced garlic cloves until they turn golden. Add red clillies to the tadka. Pour the tadka over lasooni palak paneer.
